From 24 to 28 November 2025, nursing students Stefania Eljaszuk-Konieczko, Hanna Potoczniak, Natalia Kuźmicka, Krystian Chajduk, together with medical student Karolina Dwornicka, took part in the international Blended Intensive Programme (BIP) Erasmus+, held in Valmiera, Latvia. The programme was organized by Vidzeme University of Applied Sciences (Vidzemes Augstskola) under the theme “Innovation Co-creation Laboratory 2025: Challenges in Sustainable Food and Beverage Technologies.”
The core element of the programme was team-based work on real-life challenges proposed by partner companies and institutions. Students collaborated in international and interdisciplinary teams, working closely with industry representatives, researchers, and academic staff.
Participants developed innovative projects with strong practical relevance. Natalia Kuźmicka contributed to the development of a prototype application supporting food choices that ensure adequate protein intake. Krystian Chajduk focused on the development of natural ingredient–based energy drinks. Karolina Dwornicka worked on a prototype application designed to support the maintenance of healthy dietary habits among patients of a psychoneurological hospital.
A significant success was achieved by Hanna Potoczniak’s team, which, in cooperation with a dairy industry partner, developed a prototype of high-protein yogurt with enhanced protein bioavailability. This project was awarded first place in the final competition.
Another notable achievement was recorded by Stefania Eljaszuk-Konieczko, whose team worked on the concept of a probiotic lemonade. The project received second place, as well as a special award granted by a representative of Swedbank. In addition, Stefania Eljaszuk-Konieczko and Hanna Potoczniak were awarded research grants to support the further development of their projects.
In addition to intensive project work, the programme included lectures on problem-solving methodologies and innovation processes. Students also visited local companies and the Strenči Psychoneurological Hospital, gaining valuable insight into the practical aspects of cooperation between academia and the socio-economic environment.
Participation in the programme provided a valuable educational experience, fostering the development of professional competences, international teamwork skills, and a creative approach to contemporary challenges in healthcare and food technology.
